Sugar Free Courgette Cake

This sugar free courgette cake tastes like GENUINE cake, and as a total sugar junkie, I can’t even tell it’s healthy. Winning! It’s reasonably quick, though best to do it during nap time than with a baby hanging off your knee – I attempted this so you don’t have to. It’s very simple and can also be frozen in portions so worth the time it takes. NOT that it takes any longer than 15 minutes to prep, IF said baby isn’t hanging off your knee and demanding to be picked up every 11 seconds…

It’s obviously also dairy and soya free – see here for why I’m posting a few recipes all of a sudden! and perfect for baby / toddler hands. We’ve even had it for breakfast this week #rebels

Ingredients:

 

  • dairy and soya free spread such as Pure, for lining the tin
  • 2 eggs
  • 125 vegetable oil
  • 1 large banana, ideally overripe
  • 1 medium courgette (though I doubt anything bad would happen if it was a large one)
  • 1 tsp vanilla extract
  • 300g plain flour
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 40g chopped hazelnuts
  • 50g chopped walnuts
  • 140g sultanas
  • 1/2 tsp bicarb soda
  • 1/2 tsp baking powder

Method:

  • Heat oven to 180C / 160C fan and use some free from spread to grease a small loaf tin (mine is a 2lb one) then line with baking paper
  • In a bowl, mix the eggs, oil and banana, then grate the courgette and add, along with the vanilla extract
  • In a separate bowl, mix the flour, cinnamon, nutmeg, baking powder, bicarb of soda, sultanas, walnuts and hazelnuts
  • Combine the dry ingredients with the wet and stir well
  • Pour into loaf tin and bake for 55 minutes or until a skewer comes out clean
  • Leave to cool in tin before tipping out and cutting into squares
  • Serve or freeze in portions

    Hello Yvette, I am making 2 of these tonight with the courgettes off my allottment – the cake is amazing and lasts at least 5 minutes! my children won’t eat courgettes usually but they love them in this cake – thank you:)
